A traditional Eid Savoury!

Eid Mubarak! During this much awaited celebration of Eid Al-Adha, Coco Collection sends our warm greetings and love as we divulge a special something for your taste buds.

This year, our Executive Chef of Coco Palm Dhuni Kolhu, Faiz Idrees, finally reveals the secret behind one of our traditional Eid savoury dishes, Kulhi Boakibaa aka Maldivian Savoury Fish Cake.

Kulhi Boakibaa “Maldivian Savoury Fish Cake”

2 Chillies, finely chopped

100g Fresh Ginger, grated

60g Curry Leaves

2 Limes, juiced

40gTurmeric Powder

150g Onion, thinly sliced

700g Smoked Tuna

340g Fresh Coconut, grated

500g Rice, soaked overnight and ground coarsely

Method

1.Add chilli, fresh ginger, curry leaves, lime juice, turmeric powder, and onion into a bowl.

2.Add and adjust salt and pepper according to taste.

3.Squash the mixture with the back of a spoon or with your hands to squeeze out the flavours. Make sure to use gloves if using your hands!

4. Add thinly sliced smoked tuna, rice flour, grated fresh coconut, and water into the mixture.

5. Mix until you get a thick paste-like mixture.

6.Spread evenly on a non-stick pan.

7.Bake at moderate (gas mark 4 /180 ˚C /350 ˚F) until the boakibaa turns brown, for about 40 minutes.
