Chipotle Tuna Tartar Recipe

Fresh Local Tuna Tartar Truffle Chipotle Chilli Sauce, Salmon Roe and Crispy Tortilla

Ingredients:
1. Fresh local tuna - 100 grams  
2. White boiled egg - 10 grams    
3. Chopped onion - 5 grams        
4. Lemon juice - 15 ml        
5. Chopped red bell pepper - 10 grams    
6. Miso paste - 5 grams        
7. Truffle oil - 10 ml        
8. Kikkoman soya - 10 ml        
9. Chipotle chilli powder - 5 grams        
10. Micro herbs - 5 grams        
11. Crispy tortilla - 30 grams    
12. Salmon roe - 5 grams        

Method of preparation:
1. Dice tuna lion and keep inside 
2. Put diced tuna in a clean bowl, add all ingredients except micro herbs and tortilla 
3. Toss gently and smoothly till mixed 
4. Place the tune mixture in a ring and press gently 
5. Take out the ring and transfer to the serving plate 
6. Garnish micro herb & salmon roe 
7. Serve with crispy tortilla
