It’s only a week till Christmas, but our resort teams have been busy preparing for the festive season over the past few months. Take a look at one of our annual festive traditions--making the classic Christmas pudding!
Christmas pudding usually contains dried fruits such as apples, raisins, and candied citrus peels; nuts such as almonds and pecans; and spices like cinnamon, nutmeg, and ginger. The puddings in our resorts often have a tropical twist, such as the addition of coconut and dried mango.
These ingredients are soaked in alcohols with rich flavours, like rum and brandy, before being baked into a cake-like dessert and stored for usually a minimum of one month. The high content of sugar and alcohol in the pudding helps to preserve it for long periods of time.
During the storage time, the flavours mature and intensify. When it’s time to enjoy the dessert after Christmas dinner, the pudding is warmed through and served with a complementary sauce such as brandy butter.
The culinary team at Coco Palm Dhuni Kolhu started preparing their Christmas pudding back in October as they celebrated International Chefs’ Day. Guests got in on the fun by helping to arrange the ingredients in patterns (including the iconic Coco Palm logo!), before mixing it all together to be baked.
The Coco Bodu Hithi culinary team donned Santa hats as they showed off their artistic side and prepared the ingredients for their pudding. Different types of alcohol, such as rum, brandy, and cognac were added as the team mixed everything together.
The Christmas puddings have been maturing over the past few weeks and will be ready to be enjoyed on 24th December at the annual Christmas Eve Gala Dinner.
