Traditional Maldivian Recipe - Maskurolhi

In celebration of the occasion of Eid al-Adha, we want to share with you a traditional Maldivian recipe, for a dish that is commonly served during this festive period. This recipe of Maskurolhi is courtesy of Chef Faiz Idrees, the Executive Chef at Coco Palm Dhuni Kolhu.

Ingredients
150 grams dry tuna (hiki mas)
1 dried coconut, chopped into small pieces
1 tbsp black peppercorns
4 dry chillies, chopped 
1 red chili 
2 onions, chopped
15 curry leaves
6 cloves garlic, chopped
1 inch ginger, chopped 
Salt to taste
1 lime, juice only

Method
1. Combine all the ingredients.
2. Grind together in a pestle and mortar, adding the lime juice while grinding. The mixture should come together as a rough, dry paste.
3. Serve with rice porridge or eat with roshi.
